
I had rarely seen egg cups used in the US but they are very popular here and a nice presentation for a Sunday morning or any special breakfasts. My husband has perfected the art of a medium-boiled egg. First poke a tiny hole in one end using a push-pin. Place the eggs in hot water and set a timer for 5 minutes as soon as the water begins to boil. You may need to adjust the timing depending on the size of your eggs. I’d say our German eggs are like US size medium. Dump the water and refill pot with cold water, twice, letting the eggs sit briefly. Place in egg cups and eat soon- they’re best slightly warm. I’ve seen all sorts of contraptions for knocking off the top of the eggshell but I find a light tapping and sawing with a knife does the trick just fine. Scoop out the insides with a small spoon (kids will have fun with this also), and a little salt, and enjoy!
